no-bake lactation energy bites

the combination of breastfeeding and lack of sleep as a new mama makes me feel constantly hungry (and sometimes hangry- sorry Lu!) since it's easy to reach for something that may not be healthy just to satisfy your hunger, it's important to have energy-boosting, nutritious snacks on hand so that it's just as easy to make the healthy choice! this is why I love these no-bake energy bites - that include ingredients that apparently help boost lactation.

I've partnered up with Bob's Red Mill to bring you this recipe - I don't think I ever go a day without making something that includes a Bob's Red Mill product (like their whole grains, granolas, legumes, and flours), so I'm excited to partner with them for this recipe, using their Flaxseed Meal and Old-Fashioned Rolled Oats

and you may ask, "can I make these even if I'm not nursing?"

of course! all of the ingredients in these lactation bites are beneficial for nursing AND non-nursing mamas! ground flaxseed, oats, nut butter, and Brewer's yeast all help with keeping up your energy, leveling out your blood sugar levels, and boosting your daily protein intake. it just so happens that some of the ingredients (like oats, Brewer's yeast, and flaxseed) ALSO help boost lactation in nursing mothers. so it's a win-win!

and you can use any nut butter you want - I have made these with both peanut and almond butter, for slightly different flavors! I hope you try these out, nursing or not!

no-bake lactation energy bites

makes: 24 bites

ingredients

2.25 cups old-fashioned oats
½ cup ground flaxseed
3 tablespoons brewer’s yeast
1 cup peanut butter or almond butter
½ cup honey
1 teaspoon vanilla

directions

In the bowl of an electric mixer fitted with the paddle attachment, add all ingredients. Mix on low speed until mixture is well combined and can easily be formed into smooth balls. If you don't have an electric mixer, use a hand mixer or a spoon and a large bowl to your best ability.

Roll mixture into 2-tablespoon sized smooth balls and place on a parchment-lined baking sheet. Place in the refrigerator for 30 minutes or enjoy right away. Once the bites have set, transfer them to an air-tight container and store in the refrigerator for up to 2 weeks or freeze.
